For the past several months Chef Evan Dannells of Cadre Restaurant in Madison, Wisconsin has expanded upon his training in classic French cooking to learn about unique regional cuisines from around the world, offering one-off Destination dinners for takeout. So far this has included Central Mexico, Korea, Turkish street food, Chinese Dim Sum, and the cuisine of greater Russia including Georgia and Ukraine.
Each of these meals required detailed research and experimentation to adapt classic dishes to locally available ingredients and a modern restaurant context, often with the help of partner chefs. Cadre is especially grateful to Chef Ed Chwae, a friend and executive chef for Eat Smart Culinary Travel.

For its next Destination meal on Sunday, November 8th, Cadre will be doing a special collaboration using Eat Smart in Germany co-authored by Mary Bergin* as its primary text. All orders will include a complimentary copy of the guidebook (a $15 value).
