Panoramic tour of Glasgow, the largest city in Scotland, including a visit to a few of C.R. Mackintosh’s architectural wonders and some architectural gems such as the medieval cathedral dedicated to St. Mungo, George Square and Glasgow College of Art. Not to be missed is the University of Glasgow, founded in the mid-15th century and traditionally accommodated students from wealthy families. Through the institutions of the University, Nobel prizes, prime ministers and even illustrious figures in the history of humanity such as the economist Adam Smith and Albert Einstein, who gave some of his first lectures on the theory of relativity in his classrooms, have walked. We will finish this tour in the Cathedral of St Mungo. The cathedral of Glasgow dates back to the 12th century, and they say that it rises right in the place where the patron saint of the city, St. Mungo, erected his church.

With lobsters and crabs caught from the rocky coast of Luing, scallops from Mull and langoustines, mussels, and oysters from the cold clear waters of Loch Linnhe, EE-Usk shellfish is 100% locally sourced. All of our shellfish is delivered fresh out of the water to EE-Usk daily and is prepared and cooked on the premises. A huge selection of wetfish is also locally caught and served in EE-Usk, with Halibut, Monkfish, Squid, and much more regularly featured on their delicious menus.

Staffa Island - Boat Trip
In the earlier part of the 19th century, the uninhabited Hebridean island of Staffa (from the Old Norse for stave or pillar island) was a magnet for writers and artists such as Keats, Wordsworth, and Turner, and as you approach it via the surrounding wild sea, it’s not difficult to see why! Perhaps most famous for its hexagonal columns of basalt formed millions of years ago by volcanic eruptions, discovering Staff is like discovering another world. Waves crashing against these columns over millennia have created the extraordinary Fingal’s Cave, inspiration to composer Felix Mendelssohn who wrote his famous Hebridean Overture after visiting the area - if you visit at the right time, one will be able to land and explore the cave up close … an unforgettable experience. Beyond the caves, Staffa is well known for its cornucopia of wildlife, its steep cliffs and grassy landscape providing the perfect nesting conditions for razorbills, guillemots and the delightful puffin.

Iona Abbey and Nunnery
Take the ferry to the Isle of Iona and step off onto one of Scotland’s most sacred sites. This tiny island near Mull has been a vibrant center of Christian worship ever since St. Columba arrived in AD 563, and founded the monastery that was to become one of Europe’s most significant, Iona has been at the heart of Scotland's religious life. What you see today is centuries old, but still heavily reconstructed after many Viking attacks throughout the 6th and 7th centuries. A survey carried out in 1549 recorded a staggering 48 Scottish kings buried here - as well as 8 Norwegian and 4 Irish kings. The extraordinary nave, complete with magnificent Romanesque and Gothic vaults and columns, is a remarkable space with the nearby cloister a breathtaking piece of architecture where you’ll find medieval grave slabs rubbing shoulders with more contemporary sculptures, and at its center, a large bronze sculpture The Descent of the Spirit by Lithuanian Sculptor Jacques Lipchitz - sensational! Back outside, the museum displays exquisitely carved high crosses alongside other stones, a replica of the beautifully carved St John’s Cross, and the mound that marks the burial spot of these 48 kings, including the legendary Macbeth. A truly unique journey through Scotland’s ancient religious past.

Ardalanish Weaving Mill
Ardalanish is first and foremost a farm and that is why the weaving mill is set at the end of the road, on a peninsula. In the late 90s, the farm changed hands and its new owners wanted to return it to an organic state. In the process, they looked at both the animals and the associated waste from the farm.
Sheep and Cows - For a start, existing cattle were replaced by the stronger and hardier Highland cattle, better suited for winters on Mull. This freed up the shed the existing cattle wintered in for other uses, as well as allowing for less winter feed to be stored onsite, as Highland cattle feed on naturally grown resources around the farm. The yard in the farm today was previously used as a feed store. Hebridean sheep also found their natural place on the farm. Hebridean sheep help maintain a balance on the land: they have a diverse diet, which is less intense and demanding on the environment, they eat a wide range of vegetation, giving better healthier meat, and helping their feet become stronger and less susceptible to rot, and their shorter legs are better suited to the hilly terrain. An assortment of products are available for sale.

Tobermory Distillery lies in a tranquil harbour in an area known as Ledaig, which means 'safe haven' in Gaelic. Across the bay, Tobermory sparkles like the most precious of jewels. It is a place like no other, a place of extraordinary beauty. It is the unique essence of this, its home, that has been captured in their single malt for over two hundred years. Tobermory has a captivating charm that is simply unique. The same is true of their whisky. Each cask is created, and breathes the very essence of the island as it rests; the swirling mists, the salt of the sea, the centuries of myths and legends. To taste the whisky is to taste Tobermory. And it’s not just the idyllic location that makes it special, Tobermory Distillery also produce two different, but equally alluring, single malts: the fruity, non-peated Tobermory and the more robust and smoky Ledaig. Glenfinnan Viaduct - Photo Stop.
This railway viaduct, built from 1897 to 1901, is located at the top of Loch Shiel in the West Scottish Highlands. It has been used as a location in several films and television series, including Ring of Bright Water, Charlotte Gray, Monarch of the Glen, Stone of Destiny, The Crown, and four of the Harry Potter films.

Situated on the most southern tip of the world-famous Loch Ness on the Great Glen Way, the historic, picturesque hamlet of Fort Augustus bustles with travelers looking for their next adventure, whether it be messing about on the famous Caledonian Canal, discovering the area’s endless walking and hiking opportunities, or exploring the area’s rich and intriguing history … if you’re ready to be wowed, you’ve come to the right place!

The Lock Inn sits in a unique position at the side of the Caledonian Canal Locks in Fort Augustus yet also on the main route of the Great Glen Way. Food is served all day overlooking the canal. If you fancy some fresh air you can sit outside in our seating area and enjoy a meal or drinks while watching the boats go through the Canal Locks. On cold days you can sit inside and enjoy a dram and a great meal by our open fire. The food is locally sourced and our chalkboards are changed daily with specials. We use fresh seasonal, sustainable produce and offer a range of vegetarian, vegan and gluten-free dishes.

The lovely village of Dunkeld sits on the banks of the River Tay. Visit Dunkeld village on the banks of the River Tay. Dunkeld Cathedral, built over 500 years ago, is the main architectural feature in the town. Historically it was a very important religious place for the Picts and St. Columba. In the nearby village of Birnam there is a Beatrix Potter Exhibition and Garden including a collection of old fashioned toys. Also in the area is Birnam Hill, where an ancient oak tree still stands. This Birnam Oak is about 600 years old, and is the last oak from Birnham Wood (as in Shakespeare’s Macbeth).

Time for some traditional Scottish Baking.
Afternoon tea is ever popular and Scotland is famed for its baking. Edinburgh New Town Cookery School (ENTCS) has launched a new half-day course aimed at residents and visitors to the city. This half day class is perfect for those who want to learn good traditional Scottish Baking. It has tradition at its heart. The baking will take 3 hours and then you’ll have an hour to relax and eat your home baked treat with a glass of fizz and a cup of tea or coffee in our beautiful dining room with views over Queen Street Gardens.
Walking tour of the Royal Mile.
The Royal Mile runs between two significant locations in the royal history of Scotland: Edinburgh Castle and Holyrood Palace. It was the traditional processional route of royalty. It is lined with numerous shops, pubs and casual eateries, souvenir shops and small museums.
Travel to Glasgow.

On the bustling stretch of Glasgow's Argyle Street sits a diminutive blue building, dwarfed by lofty tenements. From humble beginnings as a Drovers' Tavern c.1800, (and said to have been frequented by Rob Roy Macgregor!) a cabinet maker, a hotelier and even a dairy farmer have called it's brick walls home. Today, the building is home to The Finnieston Bar & Restaurant, serving up the very best in Scottish Seafood and Award Winning Cocktails, Champagnes and Beers.

Joan Peterson, co-leader - Joan Peterson received her Ph.D. in Cell Biology/Electron Microscopy from the University of Wisconsin-Madison. In 1993 she began a second career. She started a publishing company, Ginkgo Press, and created the EAT SMART series of guidebooks designed for travelers and cookbook lovers. To date she has written or co-written 11 of the 14 available culinary guidebooks (Brazil, Turkey, Indonesia, Mexico, Poland, Morocco, Sicily, India, Peru, Norway, and Portugal). She has traveled extensively for many years, and leads culinary tours to Turkey, India, Indonesia, Jordan, Morocco, Norway, Peru, Portugal, and Sicily.
Susan Chwae, host - Joan Peterson's business partner and daughter, Susan has a degree in Graphic Arts from the University of Wisconsin-Madison. She is the Marketing Director and technical advisor for Ginkgo Press and the EAT SMART series. Since 1997 she has provided all creative and marketing support for the EAT SMART guidebooks and the website. She has been assisting Joan or leading her own Culinary Tours since 2005.
